Since you've already completed you engineering, I would recommend you to not go for a general aviation course when you can pursue MBA in aviation.
MBA in aviation will have 2 benefits for your career.
1. It will be a 2 in1 benefit, completing MBA and Aviation course at the same time.
2. Your engineering degree won't get wasted.
You can pursue the same from UPES.
UPES is a great university to pursue this programme plus their MBA Aviation always has high placement percentage, so there is nothing to worry about.

Yes, it is really worthy to do M.Tech in mechanical engineering as it is good for future career prospects.
But it is advisable to do some specialization with respect to the current trends and the future so that you would become one of the demanded mechanical engineers.
You can also appear for entrance exams like GATE, VITMEE and the other exams conducted by the top Institutes.

Yes, if you have done your M.Tech from a reputed college such as IIT, NIT or BITS then you surely get a job and good salary package, but for this you have to crack GATE exam then only you can get admission in any reputed college.

MS would be a better option for mechanical engineering in Canada as you will get more exposure to mechanical engineering field with lots of learning opportunities.
