Yes, an online Sound Design programme can be a good option for you if you are looking for a flexible way of learning with access to expert instructions and study materials. An online Sound Design course degree or certification is equally valid.
However, there are some things you should consider such as lack of interaction with peers, industry recognition, etc.

One cannot say that just a degree in Sound Production can get you the job of your dreams, it is always suggested to have additional skills with it. Self-learning goes a long way. Try to get as much experience as you can, like participating in/ organizing events, working with industry professionals, getting online certifications and more.

It's not possible to conclude a single job profile as the "the highest-paying", it depends on the work experience, expertise, job position and the employer. However, some of the high-paying job profiles in the Music industry include Music Composer, Sound Engineer, Recording Architect, Music Director, and so on.
