Obviously VIT University is better for b.tech than DTU and SRM University. VIT is known for its education and excellent placements.
If you don't get the VIT-Vellore and Chennai campuses then prefer SRM University's main campus. Even that's not possible, you go for DTU.

Yes, you can also avail all the opportunities like the other who get admission through SRMJEE. For placements, your skills matter a lot and not the scores in SRMJEEE or your semester marks.
Universities assure placements, not salary packages.

Your cousin seemed to have obtained reasonable marks in 12th. Admission process in DU is online merit based or entrance exam based depending on course sought.
