Hi,
Choosing a branch depends on your area of interest and your job goals. If you're interested in doing a field job, go for a core branch (like civil, electrical, mechanical) according to the type of field job you want to do. Otherwise if you want to do an office job, then go for CSE or IT branches which are evergreen and have plenty of job opportunities.

I would endorse your choice of Canada and a PG Diploma because it is a good one. All PG Diplomas offered at Canadian colleges are very job-oriented. Many times they offer incorporated internships which are at times paid. You may want to choose PG Diploma in project management which has a PMI Certification which will put you in more demand. Electrical Engineering branch is easily gettable for a person with decent marks in JEE. For admission to top NITs and other few central colleges via JEE Main, you should get 200+ marks and above 90% in CBSE board exams ko get EE branch for a general candidate. For reserved category, to get admitted into MNIT in EE branch, you must score 120+ marks and 85% and above.
