Hello Arnav,
I can understand your angst of preparing and appearing for different exams. It takes it's toll. Hence, MHA is pushing for single exam across India on lines of NEET. If it happens, it will be a red letter day.

Your mentioned score in JEE Mains will not help you to get a college.
Now, you have two choices left.
Either take a drop to prepare for IIT-JEE or take admission in any private college with direct means (management quota/donation).

Yes, you can get admission in NIT on the basis of JEE rank only.

Getting NIT with this rank seems difficult. But you must try your luck till spot round counselling because there might be a seat available in some low rank NIT. And yes do try for IIIT, you will get one with this rank.

Yes, you can get, but what's score of GUJ-CET because for ACPC, it is 60:40 ratio of GUJ-CET and board result.

You need to give IMUCET exam conducted by IMU.
The last date has been passed out to 8th May so you can prepare for the next year as IMU conducts its CET twice a year
