I feel that both are equally good. The difference that arises is the students at IIT-Bombay are the toppers of the country. So, the 60 odd, best minds, when work together, it gives an entirely different approach towards things. Both have equally nice faculty members.
Obviously, infrastructure of Pilani is nice because it's a private institute.
IIT too has nice infrastructure (but not too good). Obviously, brand value is more for top 5 IITs. For research purpose IITs are considered far better than any other institute as Indian government provides huge grants to IITs.

First of all, you need to know the IIT JAM SYLLABUS & exam pattern. As early as you know syllabus and exams pattern, you can start preparing a few months before exams. You don't need to cover the whole syllabus. But whatever she is good at, you should study those things very well and clear all the doubts and concepts of that topic. As far as my concern I had studied everything except electronics and statistical mechanics ( because in my personal opinion I found it boring).
