Yes, they will accept Gujarat State Board results, it is a state education board and recognised by universities abroad. You need not worry on that front since foreign universities outside India are aware of Indian education system. However if they require some additional assessment they will let you know. To get accepted by a Canadian universities and to get a visa you have to meet the admission requirements, have the require percentile, have an IELTS score and have a good profile overall.
