I think after selecting Chinese for graduation, MA in Chinese is the most logical thinking.

but M.A Education is equivalent to M.Ed. M.A education is a Two Year Degree and can be done after B.A.

You are stuck with what us popularly called as Shakespearean dilemma. My opinion is that both these courses have tremendous potential. But my advice would be for you to choose between them the one which fascinates you the most.
