MSc and MS are both graduate degrees that focus on science, technology, engineering, and mathematics (STEM):
  • MSc: Stands for Master of Science and is the European equivalent of the American MS degree. It's more commonly used in the UK and Europe.

Your CGPA is a little low so you should appear for GRE as well as IELTS and score well in both. GRE and IELTS both are different exams so you must do well in both the exam. All the best.

Canadian universities will not accept your profile so try for SPP colleges of Canada. Score well in TOEFL/IELTS and apply there, you will get admission in them. Here is the list of all the SPP colleges:

There is provision in some banks where you can repay your loan monthly, only after you start working.
You know that you are from a middle class family, so with that mindset you have to stay in Canada. You are mature enough to do a part time job there and meet your expenses and do some savings in spite of asking from you family.
Worry not, you will make a better future there and I personally have never seen anyone being disappointed after landing abroad, especially Canada, so go with firm determination.
About worthiness of EE, just see the job listings on google of Canada, if there are much then good for you else choose something else.

No, that is not required to do MS from Germany, however it will enhance your candidature if you have an experience from a reputed organization.
