There is a huge salary difference between ship and shore jobs. It's much less. However, your thinking is right. If you do NDT, then you can take on work of testing and certifying as entrepreneur.

Yes, after completing Diploma engineering, you can take admission in the 2nd year of B.Tech. You can also choose any branch. For this, you will have to appear for LEET entrance exam.

If your rank is about 12,000, I am sure you are bound to get admission. I feel mechanical engineering also is possible in your desired NIT.

Yes, of course you can take any branch in B.Tech through lateral entry scheme. For that, you will have to appear in LEET entrance exam conducted by each state university and some deemed universities.

Canadian universities are selective so if you are asking about Bachelor degree programmes, you must complete your 10+2 with very good grades. Around 75% is required for top universities like UBC, UToronto, etc. Can you be more specific with your academic background?
