You can definitely do two courses, but then one could be regular degree and other one distance degree. This could be done at the same time.

In order to become HR professional you have following options
(a) BBA with specialization in HR. You can further do MBA HR to have better career opportunities.
(b) Graduation degree in any subject of your choice followed by MBA with HR specialization.
(c) Graduation degree in any subject of your choice followed by Post graduate Diploma in HR.

It completely depends on your interest. HR and Telecom are poles apart. As you are from electronics background, going for Telecom. MBA makes more sense. If you choose telecom management from a good institute like SITM, Pune you'll be placed in managerial roles rather than core technical roles. If you want to change your path completely then go for HR from a good institute like SCMHRD, Pune.
