Hi Ram,
This is a very ambiguous query. Which course you should do is something you have to find out, know your skills and aptitude. Many options could be there from MS IT to animation, you can even do MS management. Check the program structures and curriculum and figure out which is best for your career plans. Don't go for a course which might seem interesting but have modules you might find hard. Go with your interests, know your priority. Here is a link you can see:

There are 2 types of Masters in Canada- Course based and research based. Which university have you completed your Bachelors from? How many backlogs do you have? Extracurricular activities also help. Then, GRE also adds up to your profile. But keep in mind, what the employer in Canada is looking for. Canada job market requires skill education. If you are looking for long-term settlement in Canada, go for Post-graduation certificates or diplomas in your related field. Yeah, there are many colleges providing MS in material science engineering. Here, I suggest some good and reputed college name-
Batkatullah University Bhopal
Central institute of plastic engineering and technology Lucknow
CIPET Bhubaneswar
IIST Trivantpuram
Hindustan institute of technology Noida
IIT BOMBAY
IIT Gandhinagar
IIT Hyderabad
IIT Kanpur
And you have to be qualifying GRE entrance exam for these colleges.

Could you mention the program, alternatively you can check the Skilled Occupation List of both the countries. As of now, both Canada and Australia are favorable with opportunities and post study work options. Both are affordable though Australia has higher living expenses. You need to mention the program name.
