As a person who has gone through with the exam, I would suggest you not to waste money on entrance coaching, the exam is really simple, just ensure your English and analytical skills should be at least up to class 10th.

NCHMCT JEE is only for IHMs following NCHMCT syllabus and guidelines. In this case it should be MAH HM CET.

It all depends on where you want to start your 1st job if you study from abroad it will get your placement in aboard. But I suggest you to do from Indian government college as Indian hospitality is one of best in world and you will learn a lot in your internships compares to aboard as Indian hotel chains will put you in extreme pressure and make you a diamond. Studying from aboard will usually let you face difficulty to work in Indian restaurants as Indian hotels demand a lot of work.
