Yes, you can do your B.Tech not an issue, as in lateral entry scheme migration certificate is not required.

As you asked between 2 options, I think Jaipur is better. You should choose Jaipur over Sikkim Manipal campus.

It was cancelled by UGC in 2017 I think. But, it was later restored. It was for all distance courses and not just MBA.

Yes, they are both different and are located at different places. Their administration is also different. One is known as SMU widely.

Amity, ICFAI and IGNOU are better than SMU by a far margin. The SMU is the worst University to pursue any course now. Even their recognition was revoked but later reinstated.

There is nothing much you can do now. You can request DEB UGC to allow your candidature to be valid.

Yes sister. If any problem arise in getting the degree and other certificates, you have to go to university, and for your kind information, it is very horrifying /terrific to go there. Please an innocent suggestion to you please search nearest universities /colleges/institution for your need.

AMIE doesn't offer B.Tech, first of all, and neither it is valid. It is not recognised by AICTE and is a complete waste. BCA from SMU is also a waste as SMU is not a very good distance course provider. I would suggest taking lateral entry into regular BCA or B.Tech. Instead of pursuing a distance course as they will not be able to get you a job. I am saying this because I have done courses from both SMU and AMIE (which I dropped) and they are not at all helpful.
