There are a lot many subjects under B.A. Programme. For example: English literature, Economics, math, political Science, philosophy, psychology, fine arts, Hindi music instrumental and vocal, physical education, sociology and so on. Yes you can choose whatever subjects you like. But every college has it's own choosing criteria. For example, I you choose eng then fine arts womt be there. It is just an example. Before admission just try to list out the subjects you want to go further with.

For Ph.D. level first you have to clear the entrance test that is UGC NET. After that if your NET score is equal to any others' scores then these percentage will taken into consideration.
