I would prefer you for Hotel Management than merchant navy because HM has wider scope and more job opportunities.

You can join navy as a sailor after class 12 exam directly or as a officer in navy, or for tech entry, you can apply after graduation or engineering degree.

Once you join Bachelor of engineering course, how you joined becomes irrelevant. What matters is how you complete it. If you complete it with good marks and distinction, then you can get job anywhere including merchant Navy. Just don't worry. Best wishes to you.
