You seem to have a good profile except that your BE CGPA could have been slightly better for increased admission chances. But considering that you have work experience and got two papers chances are good. Entry requirements for every university is different. Check for minimum IELTS score requirements, pre-requisite courses, academic grade requirement, LOR and SOP requirement, deadlines etc. Ryerson University has a good MS programme in Data Science and Analytics.

Difficult to pin point colleges, MS programs are anyways highly selective and around 8 CGPA is expected. You can still check University of Windsor, University of Alberta, McMaster University, Simon Fraser to name a few. Check entry requirements and apply to those who requirements are close to your profile to increase admission chances.

The programme is not quite relevant to your education background but nevertheless, you can apply. Show them your interest, a portfolio will be asked by many colleges demonstrating your artwork and designs. It is going to be challenging but works on it. If you are truly interested in the subject go for it.

The typical deadline for September intake is October or November of the previous year. The deadline depends on the college, international students must apply early. The process starts a year before the session normally. You must check the college website and inquire directly.
