If you are getting PES-Bangalore, go for it. The above 4 institutes are good. But if we arrange them in preference order so it is like PES-Bangalore, SRM-Chennai and Amity-Noida, and VIT-Bhopal. Choose wisely. See their rankings, review, placements, faculty, etc.

Computer Science branch at JIITNoida fills below 45k rank, so, its tough for you to get that, however, you will surely get ECE there, so if you are satisfied with that, then you may pursue.

A regular course is always better as compared to an evening course and holds more value in any industry. I would advise that you should go for a regular course whether it's in Noida or Jaipur campus.

JIIT-Noida comes under the domain of top private colleges of India so there is no competition stands between JIIT and COE-Roorkee as it is way ahead than that in terms of faculties, placements and exposure.
