Yes, GSFC University- an initiative of Gujarat State Fertilizers and Chemicals Ltd, does accept JEE score for admission to B.Tech courses. However, JEE (Joint entrance exam) score is only applicable for the All India Seats (Management Quota), which are 45% of the total intake. The remaining 55% of the seats are reserved for the State Quota, which requires GUJCET (Gujarat Common Entrance Test) score. You must accordingly satisfy the eligibility criteria of each of the way you are getting admission through.Before making any decision, You can look at the official site for additional information. and act accordingly.

This answer is subjective and the opinion might change from person to person as per their interests, abilities and preferences.
So my opinion may differ from your opinion and both being simultaneously okay in their own right.
If you have an interest in Computers, softwares or IT field altogether, CSE might be good for you as that teaches the fundamentals about that.
If you have an affinity towards chemistry, There's chemical engineering further going into deeper studies than we have read in earlier schools.
Similarly for Mechanical, Civil etc. one's choices might vary
