IHM Lucknow is much better ranked college than IHM Shillong, because of the placement and easily approachable institute, and interns are also easily available here in Lucknow because of many luxurious hotels are present near it.

There are a number of central government-aided IHMS that are accepting NCHMCT JEE scores such as IHM New Delhi, IHM Hyderabad, IHM Lucknow, IHM Gwalior, IHM Kolkata, IHM Chandigarh, IHM Goa, etc. There are several private IHMs accepting NCHMCT JEE scores such as the Institute of Hotel Management, Oriental School of Hotel Management, Munnar Catering College, CT Institute of Hotel Management, etc. The choice is yours and according to rank you may get one of the colleges.
