You are already in third year engineering of CS. What specialisations you are talking about are equivalent to certificate courses that you can do anytime after completing graduation. PG in CS is pretty serious stuff and I feel you should do it for better career prospects.

Yes, you can pursue animation or hotel management. To pursue any of these courses, you need to complete class 12th (irrespective of stream).

Syllabus of the entrance exam for animation:
Visual Design, Thematic Color Arrangement, Subjects of Design, Sensitivity to Environment, Memory Drawing, Knowledge of Proportions and Perspective, General Mental Ability, Drawing Skills and
Creativity.
