If you wish to pursue Engineering as your undergraduate course, then you shouldn't have a problem if you studied math in your 12th. In case you didn't, the university could ask you to appear for SAT Subject Test in Math or Science to confirm you have the basic understanding of the subject.
In case the university insists you take a foundation course, then they will offer the foundation course right before the beginning of the course. You will not have to take the course separately most probably.

Yes you can look to get admission to diploma or certificate courses. For degree courses you need at least 60% at most universities. So pursuing a diploma course should suit your academic profile.

It depends if you are looking to pursue masters or bachelors degree. For masters degree, you need to have a bachelors degree in Psychology first. For undergraduate degree, it is not compulsory to have studied psychology in 12th.
You will need to give IELTS exam for admission purpose, and aim to score at least 7 bands overall.

Apply early can help. That is, apply by Nov 2016,if you need admission in September 2017. Have a high ielts score n school percentage above 90. You should have a good mix of extra curriculars as well. If you can not score 90 or more you may still get scholarship in the Atlantic Canada universities, just that this area is not among the real developed areas of Canada
