You need patience, some universities take more than 2 months. It depends on a number of factors like the number of applicants and also when you applied. If you applied somewhere near the final deadlines it is going to take some time. You will hear from them whatever their decision is. If at all you are so inquisitive you can drop them an email.

Yes, they will accept Gujarat State Board results, it is a state education board and recognised by universities abroad. You need not worry on that front since foreign universities outside India are aware of Indian education system. However if they require some additional assessment they will let you know. To get accepted by a Canadian universities and to get a visa you have to meet the admission requirements, have the require percentile, have an IELTS score and have a good profile overall.

Honestly speaking, chances are low. Even if a college admits you, a visa rejection is high. You have to check all possible options even outside Canada, other countries like Aus and NZ.

Canadian Universities are extremely competitive and backlogs are something they don't easily accept or prefer. If your final aggregate marks are good, you can have a chance and will also depend on other things like your projects, work experience, recommendation letters etc.

To apply for a student visa, a student must have been accepted for admission by a university, in your case you must have been accepted by a Canadian university. Once you have the admission letter, they will also tell you the guidelines, you have to apply via the Canadian embassy and provide funds, documents etc. to obtain the student Visa.
