GLBITM for CSE is better choice than the EEE from the Galgotias Educational Institutions as the CSE is in more demand and hence, you will find better scope and future ahead.

It is a good college having good infrastructure and facilities and all in budget.
It is among the Kanpur's top 5 performing colleges.
Yes, it will be good for you to take admission in Apollo college.
Apart from it you can also apply in KIT, PSIT, NARIANA etc

Yes, Being indian, you may opt for any university for your higher education although selection possibility is low when you wish to opt for other state university that have state quota. but you may appear in UPTU entrance exam and try your luck.

Indian Universities are bound by the closing date of all admission, as fixed by UGC and Govt of India.
It was 15th August to 16th August, as I got to know.
I shall request that, you check it out on Private University websites, like Amity and LPU or CU.
Admission in Government Universities are certainly over.

You should ask the college management directly for such information. You can also get same information from the UGC and AICTE about the approval of course and university.

It is certainly good, but I won't call it the best. JMI is far better than Amity University. But, it still is a good institute. Placement wise, the institute has provided packages around 6LPA. But, the minimum changes every year. It was around INR 2 LPA last time. Or probably less.

It is an Open University, so it does not have any particular compulsory classes. The practical work may be compulsory, but classes are not.
