Yes, candidates can map subjects like Political Science, Sociology, Geography, etc., with CUET History. To know which subjects to map with History for your target UG course, candidates must check the CUET subject requirements for participating colleges based on the programme they want to get admission into.

Graduates of Ashoka university are recruited across diverse profile: business analyst, credit risk analyst, executive assistant, communication and strategy, Project manager, Research analyst, data science, digital marketing, HR, product manager, software developer, and many more. (As you mentioned that you are a student of PhD from History, I believe there are very low chances but you should try and also you can prefer off campus internship program.)
Mostly in colleges placement cell always prefers student from business course or economics. But I'll suggest you to try for placement.

Best book for history preparation for UPSC would differ in various phases of preparation.
One will recommend "India's ancient past" by R.S. Sharma regarding ancient Indian history. History of Medieval India casts a light on medieval history and for modern Indian history, "India's Struggle for Independence" by Bipan Chandra speaks volumes about it.
