It's highly dependent upon your aspiration.
B.Tech is best for those who aspiring to become IES service. B.A. Political Science/History is best for IAS. B.Sc forensic science/chemistry is best for forensic science services. B.A. English/Economics/Foreign trades are well suit to IFS services. These are not only eligibility criterias (except IAS, IFS, Customs, Other services) these are the step stones that make you to lead others easily and these subjects are already learnt by you at school level and you have the basic knowledge.

B.Sc Hons stand for Bachelor of science Honours. Bachelors degree B.Sc is generally considered an ordinary pass degree and B.Sc Hons maths is looked upon as an extraordinary degree. B.Sc Hons maths supposed to have a heavier syllabus than B.Sc. Some countries offer the title Hons for a general B.Sc that lasts only for three years.

Admission shall be based upon merit in the qualifying examination.

Yes, you can. In SASTRA, 70% seats for B.Tech course are filled on the basis of JEE Main score along with prior weightage to the marks in 10+2.
30% seats in B.Tech are filled on the basis of merit drawn on the basis of marks in 10+2 followed by counselling. In the case of admission through JEE Main over 70% seats, 75% weightage will be given to JEE Main score while 25% to the marks in 10+2. In the case of admission, on the basis of 10+2 merit over 30% seats, normalized marks of each board will be considered.
