I guess they allow one year gap but in some cases only. You can have a look at the eligibility criteria of individual colleges before applying or else you can contact them.

Canada universities look for 12th and 10th scores, and they should be very good to stand out your profile from other students. Since you also have an internship experience that will benefit you. So yes, you are eligible to pursue engineering in Canada.

If you are trying to apply for express entry. Then you are better off with a Masters. There are services available on the Canadian government website to check weather you are eligible to apply for express entry.

Eligibility requirements vary from college to college. But generally you are best placed with an overall percentage of 70 and above. You should also have a certain percentage in maths. But please check individual requirements. And another key issue is IELTS score. Try to secure a good score.

No, bag log will be considered very seriously in Canada. You can try in some colleges, but normally they will not. As exceptional case because of your IELTS and academic marks few colleges may consider you.

Yes, you can do graduate Diploma one year programme. When you do this programme you will be allowed to stay back for one more year to get a job.
