Hi Dharmesh!
The selection procedure varies from college to college. Most college will consider your marks in Graduation, I.e, the selection will be merit based. Some colleges have also started taking an entrance test of 200 marks. The exam will be divided into 5 units: Economics, Accounting, Business Standard and Mathematics, Business organisation and Management and General Knowledge and Current Affairs. You can refer to college's website that you are interested to take admission in and know their own criteria.

Hi,
In a Diploma course the college will provide you job assistance but in regular course that is full time 3 year or 4 year course, be it any college they will first provide you internship then job placement and you'll get decent job as interior designing field is good which fetches good jobs.

Your profile is good and have extra curricular activities too but CMAT is on a lower side. You have low to medium chances of getting a call.

Yes, there is no doubt that VIT is more preferred over Vellore, as it is their main campus. They actually have an advantage that Bengaluru is the largest Technological hub of India, so they have a great location advantage, and they have a very good faculty base, as I was told by a relative of mine who studied there. So, I would recommend to go for VIT-Vellore.
