You can consider doing PG from Philippines, China, Russia, Germany etc. but MCI does not recognise these qualifications. Students who study MBBS from abroad undergo a screening test by MCI to get their license and registration. There is no such exam for doctors who do PG from these countries.
If you are able to pursue your PG from USA, UK, Canada, NZ, Australia, then your PG will be recognized in India.
I suggest you prepare for PLAB and other licensure exams. On clearing PLAB you can get an opportunity to work as a resident doctor in UK. There are excellent prospects.

A very generic query. This depends on your future plans. You may opt to specialize in a particular area of your interest which normally MBBS students do. You will have several options to Hospital Administration to Oncology. Best of luck.

China has over 50 universities authorized by the Chinese government to accept international MBBS students and the programs are offered in English. Graduates from these universities are eligible to take the Medical Licensing Examinations held by MCI and medical councils of other countries as well. Given the rich culture and tradition of the country, it is a popular study destination for international students.

Instead of focusing on China and Nepal, I suggest you consider Philippines as an option as the country is an English speaking country and you can converse with patients in English. MCI clearance is equally difficult if you pursue your studies from Nepal or China. However, Philippines follows US style of medicine studies and clearing MCI screening is relatively easier. Also, Philippines is now a hub for USMLE coaching. Additionally, Philippines has similar weather conditions as India and therefore similar types of diseases could be found in Philippines.
