With the marks you have scored, admission through counselling appears to be quite tough. But, I suggest you try management quota of private engineering colleges.

It's a very good question that you have asked. Once upon a time, cost of studying in IITs & NITs was very low. But now it's almost Rs. 1L. Some state govt colleges charge a little less.

You really have a good rank in AEEE-2017
Yes, you can get admission at Amrita Vishwa Vidyapeedam University with a rank of 2515. You can get the Coimbatore campus I think (main campus).
Almost all the branches of engineering you can get like computer Science engineering, mechanical, ECE, EEE, chemical, etc.
You rank is too good to get admission and also to all the courses.
