If you belong to the general category then it is impossible for you to get admission in MANIT. Try for some other college.

You cannot get admission in VIT without giving VITEEE. For management seats also, it is compulsory to give VITEEE. Still,you can contact with the VIT admission office if you have a genuine case.

If you belong to the general category then you need to score a minimum of 250 marks to get admission in SPA or NITs.

For maths, go for Cengage and for physics, DC Pandey and HC Verma are good options. You can study chemistry from OP Tandon and NCERT.

If you have confidence that you could prepare well and qualify for SAT and JEE as well with good scores, only then choose dropping a year as if you don't get desired results after an year you'll be frustrated. So think wisely before you make a decision. Or else, there are many good private colleges as well where you can take admission.

Well, getting any NIT or IIIT is quite tough. In very rare case, you can get admission here, but from this year, things have changed. As government declared that no seats will remain vacant, you may probably get any IIITs.
