Generally, Gujarat Ayurveda University is considered a Tier 2 institution. This is not in the top-tier league as AIIMS or big IITs, but it is well-respected in Ayurveda studies. It has a good name, a nice enough faculty and infrastructure especially for BAMS. In a specialised field like this, it's less about tier labels and more about the quality of the training itself, and it's certainly a good one.

Although it isn't easy to get into Gujarat Ayurveda University, it's not an impossible task as well. Get decent marks, atleast 50% to pass your 12th grade and write the entrance examination of theirs or NEET, as per course. It's competitive, since many people apply, but if you prepare well and satisfy the requirements,  you have a strong chance.
