Aeronautical Engineering is a niche branch of engineering. After Bachelor's degree in Aeronautical Engineering you can get jobs in Government sector such as DRDO, ISRO, Indian Air Force , HAL or other aircraft , rocket or missile PSU manufacturer or their ancillaries. You also may get job with airlines as Maintenance engineer. Job in private sector will be limited. Beside IIT you can consider PEC University, Amity & Manipal for B.Tech in Aeronautical Engineering. NITs are always good to go institutions for engineering after IITs in India. If you're getting NIT then you should join without giving much thought to it. DTU is also equally good but not as NITs.

Manipal University, Jaipur is relatively a new institution, but still it's doing really well as the placements were really remarkable this year. Manipal has got its brand name and value in the corporate sector, so in the coming year it's going to be in the top colleges of India. So, Manipal is a good option and you will have lots of opportunities over there, as it is a new institute.

Yes you can definitely get admission in JBIMS or Sydenham as you have scored really very well and can easily apply for these colleges. As per my knowledge your chances of getting admission in Sydenham is quite high as compared to JBIMS because the eligibility criteria for getting into JBIMS was 99 percentile last year. This year if the cut off comes down then your chances of getting into JBIMS is also high. All the best to you. According to me you must first try for JBIMS then if God Forbid if you don't get admission then you can try for Sydenham.
