The classes goes on regularly for dropper batch of JEE Mains & Advanced every week (6 days a week) and like any other coaching they have Sundays for tests. Hope you got your answer.

Yes, you can pursue B.Tech without giving JEE Mains and Advanced. In that case you have to opt for private engineering colleges.

You can buy question sets of any coaching institutions (like Vibrant, Allen, Resonance, etc.) or you can also buy question bank of any publication from the market.

There might be some age constraints and if you are already a graduate then you cannot apply for B.Tech again.

Admission letter or offer letter is the letter given to the student when he/she gets any seat in any institute in any round of counselling. If a person gets a seat in any round, then he will be able to download the letter from JoSAA website. Another letter will be given to the candidate at the reporting centre.
