JEE Advance is the examination which tests the overall preparation and analysis of a student. So a student must study from standard books. Here are the names of books:
Mathematics: IIT mathematics by Das Gupta and TMH Publication along with MTG Publication of past years papers.
Chemistry: Prakash Bahadur for numerical chemistry.
Arihant Publication for inorganic.
Jagdamba Singh for organic chemistry.
Physics: book by IE Irodov. Advance has direct questions from this book.

Sorry, but you don't have a chance to get any of the core branches in IIT Kanpur including biological and bioengineering, chemical engineering, chemistry, civil engineering, economics, material science and technology.

Here you will get paper for 1st and 2nd exam i.e. JEE Mains and JEE Paper 2. All the best.

No, you are not allowed to get admission in any IITs until and unless you have secured 75% in 12th examination. You need to clear the back exam and then score 75% in 12th, then only you will be eligible.
I would suggest you to with JEE Mains rank and get the best college including NITs and government colleges.
