If you manage to get admission at a Canadian university, then you can get the visa. As long as you have goof IELTS scores, are admitted to a good course at a reputed Canadian university and show genuine proof of funds, student visa shouldn't be a problem.

Since you are an experienced professional, I would suggest you to go thru the skill shortage list of the countries you mentioned and apply for the diploma accordingly as that will give you a chance to work as well.

Princeton, MIT, CalTech, Virginia Tech, Georgia Tech, Brown , Cornell,Carnegie Mellon, University of Toronto, British Columbia, University of Waterloo are some of the famous colleges for undergraduate studies in US and Canada. Check the college sites for SAT requirements, TOEFL or IELTS scores they require and other academic criteria.

Sheridan college is a popular college among Indian students, so it is reputable. Otherwise, if you meant this question in terms of the course, then only you can answer the question as your course choice will affect your career prospects. If it is in sync with your future goals then you don't need to worry about your decision.

For MBA courses, you need work experience of a few years. If you don't have that, you may apply for a PGDM course which doesn't require work experience.
Otherwise, many Canadian universities accept students with three years of undergrad degrees. You don't need to have 14 years of education to get admitted there.

Your visa chances will be considerably less with 17 backlogs. Plus you need at least 6.5 in IELTS to be sure of visa approval.

Yes, you can. You will have to get in touch with colleges offering BScN and ask whether they will consider your current course for credit transfer or not. If they do, you can start directly from the second year of the degree in Canada.
