You are eligible for MA in any stream, but not for M.Ed, because B.Ed is mandatory degree to pursue M.Ed. All the Best.

Doing graduation in engineering is fundamentally inviting trouble. There are very few institutions that have the authority to conduct such courses. Even to find such institutions is very tough job. However there is another way. You can appear for & associate membership exam & pass it. It is acceptable to all concerned as equivalent to graduation in engineering. I am giving you a link that will give you information about different institutions offering what you desire but go about with caution by asking them about authentication.

Placements of any university or establishment including Amity University are dependent on the economic and financial condition of the country and of that industry worldwide as a whole. In India, at least the jobs availability for Aeronautical engineers he is a bit less. Hence, Amity University also will be constrained to place its students of this branch year after Year. However, I am sure Amity University will be making all out efforts to see that their students get placed somewhere or the other. Best wishes to you.
