You need to appear for NCHM JEE in order to get any of the central government institutes i.e IHMs. After the exams in one or one and a half months, the results will be introduced and you will have to appear in the counselling. There is no need for any special book. Then entrance is at most with par to your 10 standard syllabus, and you need to know some GK on hotels and tourism. Previous year questions are also available.

Hi,
Both of them have the same meaning. One national exam for the same is NCHMCT JEE exams, which is conducted by the central government. You will have a lot of value if you go through these exams, as it will help you fetch the right institution in the later date. Though, not all the institutions in India which have hotel management as a course come under NCHMCT JEE, there are colleges which accept direct admissions without Entrance exams.
