For admission into M.Sc programs at IITs, you need to clear IIT JAM (Joint Admission Test for M.Sc). The admission is done through that exam only.

That is not actually the case. They say so because the older IITs are already well established than the new ones. They have shown better results, placement records and rankings too.
But the new IITs do require some time to establish themselves and to attain the reputation of the older ones. It is not that they are not good, it is that they are not preferable in comparison with older ones.
Anyways, all these are government institutions and so you need to hesitate to go for them as they will be better in all aspects.

IITs are similar to the other engineering colleges when it comes to the branches offered.
You can find the courses like ECE, EEE, CSE, IT, mechanical, etc, and in addition to these, you can also find some courses like aerospace, engineering physics, industrial engineering, etc.
Based on your ranks in JEE Advanced, you can get a seat in various branches.

I suggests you to join job first, and then gain some experience and then go for M.Tech degree. This will benefit you at the time of job.

No, IIT Madras DOMS does not accept XAT scores. It accepts only CAT scores as IIMs.

But, if you are in OBC /ST/SC category, then you may get a chance to study in IIT.
