Yes, they are very helpful because a school level book is not enough as you need to get to understand every aspect to the core and you need to learn the shortcuts to save time the exam. For all these purposes, you should refer to IIT foundation books.

As you know Airbus and Boeing are very big companies and they only select candidates with high expertise level. First of all, you have to be a topper in every field. You can opt for aeronautical engineering from IIT or some other good institute and after that pursue Masters in aviation. With good grades you can apply for these companies and after cracking the interview, you can get a job in these global giants.

If you get admission in an IIT, opt for electrical engineering. For CSE, you can opt for both IIts and NITs. IITs are known for electrical engineering, they have good placement percentage for electrical engineering too.

There are no changes at all except that from next year onward, JEE AIR will be calculated on the basis of JEE marks only. there will not be any role of class 12th boards marks. Earlier, 40% of the weightage was given to boards marks and 60% to JEE marks. Therefore, you must focus on JEE more than boards. 60% marks in boards are enough.

Old NITs are the best. Some of the top level NITs are MNIT, Allahabad & NIT, Warangal. IISC, Bangalore is also famous as it has good placement. IIT Roorkee is famous for its civil branch. IIT Kanpur and Bombay are at the top level. New IITs are not good in terms of placements and facilities.

IITs are the most sought after technical Institutes in India with international fame and brand. Students for IIT are selected on the basis of JEE Advanced. Legacy, IITs have the world class faculty, facilities and infrastructure. As best of Indian talent gets admission in IIT their placements is the best.
NITs were earlier known as Regional Engineering College. Though not as good as IITs, they are also excellent institutes for engineering. NITs select students based on JEE Main.
