Hello SSD, this question keeps cropping up again and again in different forums and even in the courts of law. However at least till now all the challenges to this rule of 75% in board has with held and continuous to rule the roost. This rule is in vogue for many years now and it was relaxed only during the covid times when normal schooling was disrupted due to the pandemic. There are many cases when students have scored quite handsomely in JEE Mains but they have failed to secure 75% marks in there 12 board and as a result they were unable to compete in JEE Advanced examination. Dear aspirant you can't change your category as JoSAA will automatically take your details from JEE Mains Website!I will suggest you that If you don't have your reserved category Certificate for EWS category right now then you can submit the undertaking which declares that you will submit the original and valid caste Certificate later on at the time of admission.

With this percentile your rank is around 57k
With this rank you get lower NITs lower branch. Avg GFTIs avg. Branch
And lower IIITs. You are also eligible for state givt colleges like DTU, NSUT, in JAC Delhi councelling
Jac Chandigarh councelling and many more. In my 1st attempt I got this much percentile, in that time in CSAB round I got bio tech in BIT meshra. Choice filling also matters alot. Hope you understand, many opportunities are there, but please try to increase some more percentile to get top colleges with top branch. Good Luck!

JoSSA is the counselling body of JEE Main and JEE Advanced so in same preference list you can apply for both NITs and IITs and depending on your preference and rank and seat availability best one will be allotted to you.

Once you had wrote the exam afterwards you can't change your category or anything during counselling.
