There's a course called B.Sc (Food Science and Nutrition) this you can do if you want study Dietetics, and the scope for it is high as now days everybody is diet conscious.

I think you will not get satisfactory answer to your question at this platform. You should check with your School Authorities for the same - I think there is some provision of study leave, but not sure for how long and will it be all with pay? So I think Your School Authorities will guide you better.
