The response about Admission process may come from the Aalaska Group or their website can guide about the same. But, I can share my observation about the "Age Limit" and the Age Barrier" you have mentioned. See, the Hotel Industry has two sides that way, one is of the Makers and the other is of Managers (Service).
If you want to be a Chef, you must be doing something even now and formal training will make you good enough to get a good career. If it is about being in the Front Office and F & B, the age of 26 isn't wrong. It is rather ideal to do a course and get into the domain ASAP. Smartness matters more than the age.

You can pursue a chef course once you complete B.Com. You can pursue formal training through culinary programs offered by community colleges, universities, and culinary institutes.

Tarun,
If you want to do be a chef and you are clear about your aim then go for culinary colleges. If you have a slight doubt regarding the same, I will suggest you to opt IHM and pursue the cooking/bakery courses with it.
