Yes, but not in all states. Some states have announced that they will admit students in colleges in their states based on JEE Mains. Like Madhya Pradesh, Delhi, etc. In these, admission is via JEE Mains only.

It depends on your caliber. If you are good with your concepts, then you can have a chance. Else, you might need to drop a year.

You can surely try this year for IIT-JEE Mains. For clearing Advanced you need to have 75% in class 12th or to be in the top 20 percentile. You can take a drop of 1 year, but you need to be very dedicated and committed towards preparation. Constant tests will give you an idea about your performance.

In the next two years, your interests might change (which is very common). So, its too early. Also, you will know best what is best for you. Know your interests and explore options. If you are enrolled in an engineering institute now focus on your studies and develop your profile.

JEE is not accepted by Canadian colleges so there is no point in submitting JEE results. Admissions will be on the basis your state board marks and IELTS score and your overall profile. You can take SAT if you wish but not mandatory. Please take a look at the university websites for admission requirements.
