For 2022, the cut-off was 7083 for General category candidates in the All India quota for BTech in Mechanical Engineering at the Indian Institute of Technology, BHU, Varanasi. For female candidates in the general category under the All India quota, 13852 was the closing rank. B.Tech cut-off varies depending on the category and domicile/quota of the applicant.

According to the information I found, admissions to SASTRA University are done in two streams. Stream 1 is based on a combination of JEE Main scores and normalized Class XII scores, with 25% weightage given to JEE Main scores and 75% weightage given to Class XII scores. Stream 2 is based solely on normalized Class XII scores. Admissions are given by taking both streams into consideration.
It's difficult for me to accurately predict which branch you may be eligible for with your IPE marks and JEE Mains percentile. I suggest you check the official website of SASTRA University for more information about their admission criteria and cut-off
