Best book for history preparation for UPSC would differ in various phases of preparation.

One will recommend "India's ancient past" by R.S. Sharma regarding ancient Indian history. History of Medieval India casts a light on medieval history and for modern Indian history, "India's Struggle for Independence" by Bipan Chandra speaks volumes about it.

Yes, you can go ahead and apply for an MA (H) in History at DU SOL itself after a B.Sc in Physics from DU. The eligibility criteria for DU SOL MA History programme say that you could have pursued BA or any other discipline at the Bachelor's level. But it's always safe to refer to the admission guidelines and criteria specific for the year you are applying to make sure about the eligibility.

Yes, you can choose Political Science/History as your subject in CUET course. Because these subjects are available in CUET course which are offered to students. There are other subjects also which you can choose any 2 subjects from the list given below. economics, political science, sociology, psychology, anthropology, history, geography, or Sanskrit.

Last year the CUET cutoff for B.A. (Hons) History at Visva Bharati was approximately 75%. Since admission would be merit based under the influence of CUET score, candidates are required to be prepared for a similar or little higher cutoff for the next academic session.
