The detailed procedure for M.Tech admissions in IIT is given on their website. Yes, interview is conducted before giving admission except for very exceptional academic record.

Jobs of the institutes you mentioned are based on graduation and your PG subject will not matter at all. My advise would be to do a PG in mechanical engineering related topic.

If you want to pursue M.Tech, then you might find trouble during placements as most companies demand a minimum of 60% in class 10th, 12th and engineering. Therefore, I would suggest you to opt for MBA rather than M.Tech. MBA in systems will be a good option.
