Chef Avinash Shares Culinary Secrets with VMSIIHE Students
July 12, 2022: Chef Aviansh Martins of Cavatina, a restaurant located in the picturesque village of Benaulim, paid a visit to the culinary institute and gave the students insights into how a successful career in the culinary world can be made while demonstrating a few of his signature recipes. The culinary institute is one of the top hotel management colleges in India.
Chef Aviansh Martins began his professional life as a deck cadet in the merchant navy, a field he didn't particularly enjoy. He finally made the decision to enter the culinary industry after much reflection. After graduating from culinary school in Ooty and completing his post-graduate studies in Delhi, he worked all throughout India for the renowned Oberoi Hotels before moving abroad.
Food prepared by Chef Avinash is locally and artisanally sourced. He discussed the significance of having a zero carbon footprint and how students are the food industry's future brand ambassadors.
Two recipes were presented by Chef Martins, one of which was a cool salad with fresh vegetables and a citrus dressing, perfect for the summer heat. The other was a fillet of sea perch (Chonak), which he marinated in rechard verde for a Goan-influenced continental seafood meal. The fish was then cooked while still enclosed in its banana wrapper. Then it was served with velvety caldin sauce and roasted pumpkin mash.
The students discovered that Goan cuisine may be combined in a variety of ways while utilising various methods to produce some distinctive dishes.
The students learned numerous insider secrets from Chef Avinash during the event, which they considered to be very educational and useful. "Cooking is a creative endeavour, and for the finest results, one should always use fresh ingredients. Chef Avinash continues, "The cuisine created with love is the tastiest food.
There are no fast cuts to success; you must put in a lot of effort because it takes time, Chef Avinash told the children. Don't lose heart; be patient with yourself and take care of yourself. Great chefs don't just appear out of thin air; it takes years of hard work, perseverance, and long hours. You should have confidence in yourself and not be discouraged by what other people think.
The VM Salgaocar International Institute of Hospitality Management students enjoyed and learned a lot from Chef Avinash's workshop. It was interactive, lots of learning and the students brought home numerous tips.
